I have never experienced this with my multi monitor setup but hope i can help!
-Disable onboard video display output if the motherboard has this
-Make sure the monitor drivers are installed
-Move main display to another screen and test if odd behavior persists
-Connect all displays with displayport connector?
-Set all display refresh rates to 60Hz or as high as they can be set (test both)
-Make sure the game display resolutions are equal to the max monitor output resolution
-Run the game as borderless fullscreen application mode
-preform a driver cleaner procedure
-when the displays are disabled / put to sleep mode check and see if they still are listed in device manager
-Disable G-Sync support

Nvidia Tech support had me run the DDU and download their hotfix driver. Followed their procedure with no satisfactory result.
