In the custom button/key mappings menu, you just need to highlight what you want to change and click select, this should bring you to a new "Input Mapping" screen where you just need to press your desired key/motion your desired mouse gesture. What you choose should bring you back to the custom button mapping menu; if you are happy with what you selected, you'll notice your overall scheme show "Custom" when you back out and enter the Controls menu.
