because these assignments can be done mutiple times. It isnt a bug/glitch, it was intended
Is there an confirmation of this, I have been looking at officials pages like https://help.ea.com/help/battlefield/battlefield-v/battlefield-5-special-assignments/ and non official pages but none is showing they should return after completion. I have a lot of previous non weapon assignments which also did not return and the ones returning seems to be the ones recently added the the assignments menu.

Perhaps there should be some way to track how many times you've completed a certain assignment. OR a special reward for completing all assignments at least once. Honestly I've been doing the same 4 challenges over and over again because they're so bloody easy. Absolutely no motivation to try the other challenges.
I don't see the need to have to repeat the same things over and over for CC, you earn a fair amount from simply playing anyway. But it would be nice to be able to block assignments you no longer want to do.
Not sure if it's possible but maybe seperate the ones already done, or maybe add a counter, just some way of tracking, along with changing them in game instead of in menu.
