Same issue here on Pc. Have only played single player quick race / career but happens on each start. Pause then Restart session and it remembers what you changed it to before pause and restart. Pain at spa to move from 50-56 whilst accelerating, managing wheel spin and trying to avoid cars!!!!
I have EA app version on pc and also still an issue. Every session it defaults to 50. Only fix is adjust to what you want it to be when you take control of the car then restart the session.
I have this occasionally also. For me it happens in TT but might also happen in MT but haven’t tested there yet. Am on PS5 using PS4 game version
