I do understand what your saying however you have answered your own question..  it’s is just a guide. It’s a decent guide.  For learning tracks but it’s not and should not be used expecting to make you fast.   It does in general terms show you the correct racing line.  However F1 drivers being the very best often use different lines when attacking some corners.  

A better aid that is now being implemented in games and something I first encountered when I first time I did a actual tracks day.  So is also used in real world so it’s a thing.  Are indicators or cones. At braking point. Turn in point and apex.  And sometimes one marking where to aim exiting the corner.   

The reason it’s a better aid is simply cause it shows you exactly where the apex is.  And to be fast hitting every apex is essential.
