In F1 2021 I was really bad at starts but in this game I'm still to have a bad start. If I don't get any places at least I'm able to continue where I started. Just don't put much throttle so your revs don't get to high. If you look at the MFD it says when you have the right amount of revs, when you see that just try to maintain the throttle like that and wait to release the clutch. When you release the clutch don't get full throttle immediately or you will have a lot of wheel spin and may even spin. Just go casually applying throttle as you gain more speed.
PS: Although I'm playing with a pad and with auto gears, having a wheel/pedals and manual gears are way easy to get better starts.

I havent played this years game on controller. But my opinion on last years game was it was easier to do starts with controller, it seemed very OP. Thats with no assist.
might be a bit different this year.
