Did you look in the OSD customisation settings? In my case the rear view mirror was hidden after I set hidden to no it worked.

I can confirm on xbox series s
Same on pc the virtual mirror by default is set to hidden in the osd customisation menu

For those who might be having those issues, I'll refer to my post in a different topic which explains in somewhat more detail on how to fix it (until Codemasters fix this small issue).
