I wanted to make a more through explanation for anyone who has this problem in the future to follow as my initial solution wasn't entirely clear,
1. Delete Clubs Data in Settings > Profiles > Delete
2. Navigate to Clubs and open it, and then remove the ethernet afterwards within a few seconds.
3. After it says it couldn't find data and you can create a new player, plug the ethernet cable back in, and try to quickly save on this new player.
4. After successfully saving it you should be able to now make any changes to your character.

Did you ever find a solution? I’ve been dealing with this for months now as well and have finally found someone who can relate.
I have the same problem, I try to do all these solutions that were given and still have the same problem, it is very disappointing. It seems that every year there is a bug that is extremely difficult to fix, last year there was a bug that also took days to fix. Now this year there is another one that I am not able to solve.
Did you find a fix for this?

I've been trying this for the past two or three weeks, and i still can't fix it, when i'm in the "create new player" part, i press save but then an error pops up, saying that the character name or something could be offensive using the default random settings the same game puts.
I've still got this issue on xbox series anyway i can fix it without Ethernet cable?
