What do sliders actually do?

Is there a madden/EA official explanation on what each slider does both for CPU and User? I thought I knew but the sliders aren't doing what I thought they would...

All pro is too easy, and All madden has too many BS plays, like my QB in a clean pocket throws a perfect pass right into the chest of a DB not moving...
