How do I turn off Instant Starter

1st:  Testing the Game I created a character and Failed every Combine.  Ending up with a 66 overall grade but drafted early 2nd round?  My 66 overall player is now the starter over a team with 74 overall RB?  How do I turn off Instant starter if I want a more real true game experience to work my way to starting RB.  

2nd:  Will we only see players drafted in the 1st and 2nd round?  Is there no way to get a low draft pick or a undrafted FA?  

3rd:  If instant starter is the only option then what is the point of the Combine aside from a micro mini game?
