I downloaded the game yesterday and hopped in to play but I’ve been having to wait for it to install I’ve been waiting for a good 10+ hours now I’ve already restarted my PlayStation should I try deleting the game and redownloading it?

I recommend making sure the game is fully closed down when you're installing it or else it will take longer to fully download.
If it's still hung up I'd try rebooting the modem and router power by unplugging it for about 5 minutes. There could be a hiccup in the connection and that easy fix should do it.
