The Origin team has seen some reports of this and are looking into it. Are you able to see your friend if you both delete each other and re-add each other?
I'm om xbox and yes I have tried deleting and re-adding. I am on xbox series s and my friend is on xbox one x. All I see on my friendslist is 1 person. I do not know how many of my friends have the game other then the one on the one x.

Do you know if you and your friend are playing on the same version of the game? You have to both be on the Gen 5 or Gen 4 version together.
The Series X and S allows you to download two different versions of the game with Dual Entitlement. - EA_Blueberry
On a side note, if you pull up your friends list on your Xbox console you can always see who is playing what game. If you're looking to invite some friends that is an option. Inviting them to a party and inviting them through there should work. Make sure you have notifications enabled.
