@DJ_Englishman are right (except the fact that there are some bugs resulting in wrong decisions, e.g.sideline catches are sometimes wrongly called out of bounds).
In franchise I've seen an option 'challenge' in the menu (when you pause the game). On PC it is between 'timeout' and 'exit the game'. I haven't used it myself yet. And I did not see it yet that I could really use it because it was always locked (the same as it is with 'replay' if you pause the game in the wrong moment). Maybe there is an option in the settings where you can chose the accuracy of referees' calls?
