Customization in offline mode

We need to be able to fully customize ratings, appearances, positions, and coaches in offline mode. A lot of EA games do it I don’t know why EA won’t do this it seems to be not to difficult to do. Just curious because I think it would add some much value and can create many storylines like I do in madden and other games.
