Add in that in online versus it always seems to make newer players always lose faceoffs even with the top 5 teams for online. I played two games and neither one have I won a single face off

This could be related to lag. Try power cycling your modem/router and console. There is nothing built in to the game that forces you to lose faceoffs you would have won.

What about winning faceoffs when you're not even touching your controller? I've e done that many of times..

This can happen due to ratings when both opponents don't win the faceoff. If you don't touch anything and your opponent doesn't time the draw right, the player with the higher faceoff rating will win it.

Isn't the presence of the Quick Draw ability something "built in to the game that forces you to lose faceoffs you would have won"??

No, but the fact this is a peer-to-peer connection means the host will always have an advantage. It's exactly why people will quit and search for another matchup if they're not the home team; they get advantages in things like faceoffs (among many others) despite the advantages not being programmed in the game.
It's just the nature of P2P multiplayer gaming. One person will always have an advantage.
