Every game is different so it's possible you'll have lag with one game where another may not. My best advice is to try using a wire and see if there's a difference.
I don't have a wire for that kind of thing.

Unfortunately, we can't rule out any issues with being on a wireless connection. Most likely, that's the case since it's the biggest reason for disconnects and lag. You can try editing your router settings to put your console on it's own wireless channel. That may help. A good solution for others in the same situation is to use a powerline adaptor.

My Xbox is on the 2nd floor and my router is on the 1st floor.

That's definitely going to cause problems with a wireless connection. A powerline adaptor would be your best solution in that case.

I managed to power cycle my router. Sadly that didn't work. This is ridiculous. I have literally tried everything possible. I'm honestly considering just refunding the game at this point.

You're still wireless with a lot of distance between your console and router. There also are walls and floors in the way. This is going to give you a bad connection. As a test, can you move your console to a TV that is closer to the router? It would be great to test it with a wire, but if that's not possible, even moving it closer should make a difference.
