I believe you, but I also don't know what else to tell you. If the update is not responsible, then something else is happening here. You've got two different users in two different countries, both playing goalie, telling you that the gameplay, specifically that in the 3rd period, has somehow reverted to NHL 22 and NHL 21. Gameplay prior to the update was wonderful.
I've attached a screenshot, and I also took a video, but for some reason the video won't attach here. I had to take a video because there were so many 3rd period goals, they didn't all fit on one screen. This is just the one example I recorded. There were many, and it started immediately after the update. Coincidental timing with whatever the issue really is, perhaps, but something is off.
Basically: we entered the 3rd with a 4-3 lead. We then scored 2, and then we traded 2 goals. Score now 7-4. Then, starting with 5:19 left in the game to 4:17 (just 1:02), they scored 4 goals against me to take an 8-7 lead. Somehow, coach doesn't pull me, but that's another issue. Then, starting with 2:21 left until 0:12, we scored 3 to take a 10-8 win. The 3rd period alone was 6-5.
I have since been readjusting all my sliders and difficulty levels to get it back to something more realistic; and these are not just subtle adjustments of 1 or 2 notches on a couple of key sliders. i had to drop top skating speed and top pass speed by more than 15 each just to have a chance. I had to drop all the shot accuracy and power sliders significantly, and also raise goalie save reactions and cross-crease speed by just as much, effectlively doubling the change. I've also had to up the difficulty level from Pro to All-Star, shorten the period length to help limit shot attempts, and make numerous other changes across all the catergories. This is not some minor adjustment because I got burned once in a bad 3rd period. It's taken many games to get it back to play like it was prior to the update after suffering through many games of suddenly terrible gameplay.
I've got my sliders pretty close to where I can play realistic games again, and I've also recorded my previous setting in case it reverts back to 'pre-update' gameplay, so I'm good; I've resolved the issue myself either way. If the development team or the coding team or whoever doesn't know what happened, or what the reason for it is, that's one thing. That's fine. But please don't tell us nothing happened when something clearly did.
