Poke checking has an effect on a player's ability to maintain speed. So, in the event an opponent continuously throws poke checks, mindfully use the right stick to pull the puck away from the danger and separate yourself (create distance). If you're not using RS to fully control where the puck is while you're stick handling, you're missing out on a key skill that will help you in the face of an onslaught of poke checks.

They are clearly aiming the poke check and have good defensive stick positioning

Stick checking is already hardly effective, slows you down to a crawl, and takes you out of position if you miss. Only way they could further nerf poke checks would be to remove them entirely.
