Is it indented that you can have larger rink in Rivals?

What about HUT champs? 

I don't know if this is in HUT Champs or not. I'll pass on the note about this though.

How come this is still happening? This doesn't seem hard to fix...

I don't have an update. We're aware this is happening though so hopefully, we'll see it addressed in the future.

Could the overhead camera be adjusted to the wider rink size so it wont move side to side constantly? This could help people like me that it causes issues with motion sickness. 

This is already in the game and has been for several years. Hold down the camera change button for a couple of seconds and you'll get a hybrid view that keeps your player and the puck on screen.

What do you mean by camera change button?

The button you hit to change the camera focus between the puck and your player. on Xbox it's the small, hamburger button to the right of the Guide button. On PS it's the touchpad on the back of the controller.
