Sticks are allowed to pass through bodies and objects when not initiating a poke check or stick lift. Incidental contact is fine, but when a stick passes through the body, it can't affect the puck.

For the 3rd video, you're turning into the defender. They were farther down the ice and didn't have as far to travel. Then, you also turn into the defender. You could have stopped, changed direction and created some space. Protecting the puck could have kept it more out of reach as well. You also need to keep fatigue in mind. If your player had been on the ice for a while, they could be fatigued. That's going to slow down their speed.
