I'm not aware of any issues with auto passes to opponents. Can you get me some video of that? Have you tried using a different controller?
As far as the AI issues go, manual switches can be made by holding in R2/RT and then flicking the right stick in the direction of the player you want to switch you. You can also get the last man back by holding in R2/RT and clicking the right stick. Again, video would be great to see what's going on. Usually, AI behavior is dictated by the strategies you've set and what the human-controlled player is doing. For example, if you take the player you're controlling out of position, the AI players need to adjust to cover the open space they left. This means they won't always be in the best position.
@EA_Aljo Thank you for the reply. Sorry to clarify by auto pass I mean pass buffer (swapping to player to grab an open puck and they chuck it down the ice cause it buffered a pass).
I actually didn't know about pressing down the right stick as you swap, I'll have to try that next time Ty. I do know that moving a player out of position will cause the AI to try to cover the open ice or position but I find even with a behind the net stratagey or overload, where I should have a player hanging by the opposite goal post (or on pp), I end up chasing the player back and forth as I get into passing position and they move out of position for the tap in, then as I reset they move into position, rinse and repeat. It's like they are teasing me with the tap in goal but if I want them in position I have to force covered passes, but it seems to always work for my opponent so maybe that's the way to go.
Additionally I have my AI set to stay wide (I know this is only a breakout setting) but they always seem to follow me in the O-zone and run into me at center ice. Maybe this is a problem with me not playing a player in the right position but should that really matter for center ice when entering the zone? Also if I ever enter the zone with a dman the play is almost always offside. I find I usually get about 3 or 4x the offsides of my opponent, which could be confirmation bias but it seems steady. I try to avoid doing moves on the line but even driving straight into the zone with one of my offencemen, someone is always offside. Sometimes even. If I'm in the d zone and a player breaks out early or a player comes out of the box, they will skate offside and stay there for like 30seconds/minute, it is ridiculous. I have my sliders set all the way to "carry" so I don't see why this is such an issue.
I'll try to post videos if I can. If you want you can always check my page (@chaseinator3469) on Xbox. Pretty much all I do is post NHL clips of issues (occasionally of a nice goal or play but rarely). If it isn't obvious what happened, its usually cause I can swap to the defender.

Thanks for the clarification. I've certainly had passes happen due to the button press being cached. There are times I realize it's going to happen and then am able to hold in the pass button to hang on to the puck or quickly one-touch it to another teammate. Just something to keep in mind for the future.
As far as the AI goes, they are dependent on a lot of different variables. They are playing according to the strategies you set, where opposing players are, where your players are, their ratings, where the puck is, looking for open lanes, etc. So, they aren't always going to be in perfect positioning since there's a lot going on they are considering.

Would it be possible to get developers to look into:
A) Adding ability to turn off cached passing (but leave on cached shots)?
That would be a big bonus for a future game.
B) Setting position preference for some players as I seems like sometimes they don't want to stay open for the pass, unless they are just lower rated.
C) Setting for "get out of the way" or "stay close for support" to avoid them running into each other and me 24/7.
D) Option to get players to stay behind the line and wait until I cross it instead of skating ahead of me when I don't have a pass lane or hanging out on the wrong side of the line?
