Nhl 20 reset everything from scratch?

I just recently installed and started playing NHL 20. I skipped through the main start up quickly not paying much attention to the difficulty options and how they were explained. I'd like to go back through the whole main start up but cant figure out how to . Ive deleted the game data from manage game and add ons. Ive even uninstalled and reinstalled the game. Every time ally info is there not like I started from scratch. Am I missing something? Is there another way? Thanks

    It's been quite a long time since I played NHL 20 so I don't quite recall how to do this. Check the settings to see if there is an option for Quick Settings. That is where this has been in recent games.
