I saw this description somewhere else, which was very helpful and I've now finished the challenge.

Click on an item on the board and check the info at the bottom, whether it has a trash can or a gem, only higher level items can be sold for gems, otherwise they are trashed, after you sell an item for gems click on save and exit.
