What happens to the points accumulated in excess of the target? They are lost or have accumulated?
it would be possible to have an arrow to go from one assignment to another? It would be much easier to follow them all.

Even though the points may expire for the current 24 period, I have the speed up tokens pop up just about daily without having an epic project going. And when you press these; as with pop up balloons, the reward is one point towards the total needed to earn an additional speed up token.
Having said that this would be the sloooooow way of completing production of new speed up tokens.

Since the Epic Points are also used to build the mountain area, how do I know how many points I have available?

You can find out how many points you have by pressing on the Epic Project icon, it will show your points and the next tier level. By pressing "show tasks" it will take you to the Epic icons. As you already know those icons will offer you xxx amount of points for an item.
And as kiryl pointed out there will be different points for each individual offer.
