Is there a way to store all my buildings some where while I restructure my city

You can place items like transportation and parks and such in storage. Tap and hold a park, look to the right of the screen, place it in the blue storage bin.  It can be found later in "Parks"

There's no such option at the moment on SimCity BuildIt. You can bulldoze the buildings you don't want to keep to get some simoleons back and move around the other buildings . Please note that if you bulldoze some special buildings or sell limited-time-only decorations  you will lose them! Be careful with that.
