Hi, im missing the Exchange option for the popsicles
İ can currently only buy seasonal currency with euros in the showroom. Popsicles have no use currently for me
can someone help ?

There is no "exchange" option. You're not missing anything. It doesn't exist.
I added the screenshot that shows i dont have this option mentioned in the link
There is no "Popsicle exchange". You collect then to complete the four Chicago Missions. That's it.

Click on the chicago orders and a clipboard with 3 orders will be opend.
You find them on the right side from the saisonal currency,
