Do not worry about dog park, cat jungle and pet store. those are buildabl;e and editable so you can easily create new ones in smaller lots if the pre-build ones don't really fit. Only the equestrian rabbit hole will need a huge lot as the rabbit hole it self look humongus.
for the pet store, i think a 30x30, 30x20 or even 20x20 lot is fine, and if you get limited edition you can build one yourself there (i can try building one for you if you are not in a rush as i'll be getting my game on the 21st and prolly be away that week)
Dog park is very easy. Just get a 30x30 lot trow a fountain, a bunch of trees and lots of room for dogs to run and play
Cat jungle can be also on a 20x20 lot as the only thing that makes it a cat jungle is that climbing scratching thing ( i think) so no need for too much room. just a small park with a few cat items
the only lot that has to be big exept the lot that will hold the equestrian center is the lot that sims will train for jumping (i would put that next to the equestrian center by the way- mostly for looks) that need quite a lot of room since the obstacles are taking too much space.
So to make long story short no need to clog your lovely world with huge lots. Just keep two big ones for equestrian rabbit hole and for horse training, and just take little extra time to build new ones for the rest in smaller lots.

Just remember i'll prolly be out of town 21st -30th and i'll be receiving my game during those days. So if you are really not rushing i can help with the pet lots. I will try to be home to enjoy my new "toy" but i've been avoiding going to Patras for a while now, and Mike is getting a bit annoyed about it.
