By the way have you tried to use the 'Tropical Retaining Walls' for your canals? I think they come with Island Paradise and @Pan_Nymira has mentioned them already .... but just to illustrate that they could make a great lining for your canals ... especially if you won't mind deviating from the original reddish brick look ... here is one of my screenshots:

They are quite fiddly to place but definitely worth it. You'll find them under the Environment tab in CAW and you can obviously adjust the height according to your needs.
