You might be right here. Every time I do it, the egg is blue when I enter my town, and then I go to KL and turn it pink.

Re: the MK I, while it appears that it always gives the opposite color egg, in my experience, the success rate was not 100% if the egg was pink when I entered my town and I tapped it. If the egg was blue when I entered, and then I went to KL and changed it to pink, the success rate has been 100% (at least 15 times in a row now).
Re: the MK II, I am sure that it does not always predictably give the same color. I suspect you have to change the color through some KL mechanism, but I haven't bothered testing it because it is just as easy to put it in the LZ and have a neighbor tap it for 300 guaranteed blue eggs.
