Pretty sure it's just pure luck. Just try tapping the same 3 balloons over and over until you get the 5 donuts.

After that, nothing else matters. Surprisingly, this technique seems to do nothing to change the randomness of the outcome. Imagine that! - If there is a same colour trio, I tap them.
If there are two pairs and four odd, then I tap 3 of the odd 4.
