I've always had trouble with my iPad but there is an easy workaround. In your friend list, tap quickly on left side the person you want to delete. There is a Profile button that appears there with a single tap, but it quickly disappears if you try to slowly tap it. But quick taps usually get it with a couple of tries.
Once the profile is up there is a delete link.
