Totally Blind UFC 2 Player would like Clarification on Ground Defence Controls

I have what probably sounds like a silly request. As the subject states, I am a totally blind player of UFC 2 on the Xbox.
Up until recently, the only way a totally blind gamer could hope to play console games was to try and memorize things like game menu screens, that is if they were fortunate enough to have someone read them the screens. But, as of a few weeks ago, this is slowly changing, at least for some of the games. In my everyday life, I use software on my computer called a screen reader. In short, this software runs in the background and speaks the contents of the computer screen to me using synthesized speech. In recent versions of the Xbox software, they introduced a screen reader for the Xbox system called Narrator. This allows me to set up the Xbox independently, log into the store, and even purchase games all without sighted assistance.
Unfortunately, Narrator does not read game screens. One of the screen readers I use on Windows has an OCR feature. So, I could stream games from my Xbox One to my computer, and then perform OCR on the game screens. Using this method, I am now able to access game menus in UFC 2, including career mode. In fact, I just created my first fighter, and won my first fight!
So, after that long rambling background, here is my question. The UFC 2 manual is great. My screen reader can pull the text out of the PDF. Unfortunately, the only part that the screen reader will not read is the section that names all the controls for fighting! This is because each control is being rendered by some kind of visual font that the screen reader only sees as a blank space. So, from my perspective, I hear "press and hold + to stand up!" As you might guess, that is not helpful! Grin
I am decent at blocking, but I cannot seem to figure out how to stand up after I get taken down. I can even block takedowns if the announcer mentions that my opponent is going for a takedown, but I am still really guessing.
Does anyone have a whole list of the controls in text? I know that the EA site has plenty of control maps, however, they are all direct images!
