Is it even possible to defend takdowns?
I've played hundreds of fights already (offline and online) and essentially my position, stamina, health and even preempting takedowns by pressing L2 and R2 makes absolutely no difference in takedown defense... if the opponent attempts a takedown, they get it.
if you want to defend take downs you have to have more stamina or a higher stat, player skill means nothing in this game. This is a game for the guys who said "the ground is too hard". Well they got what they wanted, a ground system consisting of 3 mini games where the guy on bottom gets a free pass from any GNP if they can block three or more strikes. They tried to make the system "easier" by taking away your ability to influence the ground. Just play UFC 3. Not like you are missing any new fighters.
