Why am I able to max out my attributes and moves from the get go?

So I just started playing UFC 2 and I love it but I don't understand why in the create a character area....I can set all attributes to their max amount for a style and can then go to the moves sections and set everything to a level 5 there if I wanted to as well.

Can someone please advise how to use the moves and attributes (and even the perks)?? I'm looking for something a bit detailed.

    You can only use that CAF in Quick Fights though. The best way to use the moves is in a combo. Jab/straight/body shot. Body/head/head/body. Etc. Mix it up, and use the L1/LB strikes at the end of a 3 or 4 strike combo so it does the most damage. Granted you landed the first strikes. The game uses a combo multiplier that makes certain combos do more damage. 

    The attributes you need to worry about are the ones perfect for your style. I select Fluidity because I want to be able to strike faster. Guard specialist to help with transitions on the ground. Weathering Storms to help survive a health event. Escape artist to help with getting out of submissions, and Like Glue because I like the clinch. The levels represent how much it increases your normal strikes, denials, transitions, etc. 

    All the perks say what they do on the back of them. I think you just use the left stick to turn the cards over. There is where they detail it more.
