I've been having the exact same issue. Every time I go into a fight, whether it's ranked or quick fight. At least 5 times per fight, there's a slight lag spike and then the screen flashes black and sends both fighters back to their corners and replays the animations for the start of a round. The clock timer doesn't reset though, and all of the strikes are still accounted for before and after the reset.
I've had this happen to me 5 times in one in-game minute. It really takes away from the immersion and enjoyment out of the game and I've been playing UFC 3 since I've encountered this issue. Also, if you are on Xbox you can press the home button after the fight and press record what happened and record the last 2 minutes of your gameplay.
Hope this issue gets fixed soon, as it makes the game barely fun or playable
