As far as I am aware, the PS5 Pro has two modes. Ray Tracing Mode will provide a better graphical appearance, but generally only gets 30 to 60hz depending on the game. Performance mode drops Ray Tracing and other high end graphical settings allowing the PS5 to go up to 120hz.
I believe the original PS5 had Resolution Mode instead of Ray Tracing Mode which might be why you were thinking there were three modes.
When you say the game crashes if you're not signed into PSN do you mean the game fully closes and it kicks you out to the playstation menu or is it just taking you back to the main menu of the game?
