im doing all the inputs but hes grabbing the middle of the board, its only hit the trick 2 times out of 30. in air hold up on right stick and L2 X because im goofy its broken i have no control overr ...

Benihana's input is right stick up, then L2 + square (instead of X like you mentioned).
Benihana requires you to grab the board by the tail first, which is achieved by holding the right stick up and holding it before you press L2.
