I really do like the idea of counter plants. I don't think they would be good in Battlez but may be fun to play in Adventure.
If I may suggest an alternative to dryad grass, Oil-Shroom, a shroom kinda like fume-shroom but shooting oil on zombies, slowing them down, and if an explorer/torchlight zombie arrives and gets oil on him, all the zombies with oil on them on the lane burn.
Also some plants like Cauliflower but that will work only on animals, if a zombie chicken or an ice weasel go near it/start to eat it, it is convert and start eating zombies instead If a zombie parrot try to steal it, it is convert and instead remove a zombie from the board

For the second part, it kinda looks like the same as the upgrading plant system in the chinese version so I'm not sure EA would add it
