Moving EA Folder WITHOUT just moving Documents Folder due to OneDrive

I do NOT want to simply "Just tell your computer to set documents as somewhere else for Onedrive to copy from instead".  Because I LIKE knowing my documents, my ACTUAL important documents to me are backed up on onedrive SHOULD I need them or for whatever reason my computer dies.  I can not simply deselect the EA Folder because you CAN'T deselect anything within your documents folder 'cause Onedrive just don't work like that anymore.  i am hating seeing Onedrive complain at me about trying to sync several hundred edited files every time I open Sims 4.

I want to know how I can just move my Electronic Arts folder, and ONLY that, from Documents SOMEWHERE ELSE without stopping Onedrive from securely backing up everything else in my documents AS I LIKE IT.  It should not be this complicated.
