It finally registered enough time. I found that for some reason it had to be in either the pilot or gunner seat in a helicopter. If it's a transport helicopter it wouldn't register time if I was in a rumbleseat.

And yes correct, being in a passive passenger seat in a transport heli will not count towards completing the CO-PILOT assignment to get the AS-VAL unlocked!
The assignment is named Co-Pilot for a reason, but agreed, the description for the requirements listed below are not the most clear, as it only stipulates "spending 10 minutes in helicopters..."
