There is a wedding event already (the goals are rather repetitive). You can create your own wedding venue for your sim to get married at or download one from the gallery - there are a lot of really great builds. If you hire a household sim as caterer, you can have them make whatever food you want and gourmet cakes make great wedding cakes. 

I do like the idea of a planner though. I would take it a step further and make it a full event planner, not just weddings. Having an event succeed or fail depending on how well you do your job would be fun. It would be one of those jobs I'd have a sim fail on purpose just for the chaos! "What do you mean the caterer didn't show and all the guests are hungry?! Who invited the Grim Reaper... wait..." 👿
