Speaking for myself, I can't imagine playing on mouse and keyboard, especially not for vehicles and therefore have 4 questions:
1. When I use my ps5 Controller on PC or any controller in general, will I still have aim assist?

I used a PS4 DualShock to play Battlefield 1 on PC. I suspect many of my experiences will apply to your situation.
1. To use my PS4 Controller on BF1 I used a program called DS4Windows. DS4Windows supposedly supports the PS5 controller now too. Also Google tells me that Steam will directly support the PS5 controller. You can play connected via Bluetooth or a basic USB cable. On BF1 at least if you had your infantry controls mapped to a controller you had the option to use Aim Assist.
2. Yes. An experienced controller user w/Aim Assist can compete well against PC users. I played maybe 8 matches with controller on BF1 PC and was MVP in two of those matches (On PS4 I was MVP in 33% of my matches). Aim Assist is at its best in clean CQC engagements and BF1 aim assist feels similar to BF2042 aim assist. Outside of clean CQC fights experienced KBM users will have the advantage.
3. Controller has some limitations. Switching seats in vehicles is a chore since you must cycle through all the seats. Using gadgets, melee, jump, crouch, reload, interact, fire mode toggle will typically require you to take your thumbs off the sticks. Aim Assist isn't perfect and can get confused. You'll find most of the popular YouTubers that use controller recommend turning Aim Assist snap down to 0. It's often desirable to lead targets, especially with mid/long range shots on moving targets - aim assist will work against you here. ADAD strafe spam is a bit crisper and more effective with KBM. There's many scenarios where Aim Assist doesn't work (against non-player objects, when using hip fire, gadgets, targeting players mostly behind cover [such as exposed heads, feet, elbows, players inside vehicles). PC players will attribute any and all of your successes to Aim Assist.
4. As I recall you can have both hooked up. Just map your infantry controls to your controller and you'll get aim assist. All the menus/UI default to KBM.
