As long as you own both versions of the game (either via a separate purchase or the Gold/Ultimate edition that comes with both versions), you should be able to install/play the Gen4 (Xbox One/PS4) version of the game alongside the Gen5 version of the game on a Gen5 console (Gen5 is PS5 and Xbox Series S|X).

Because with the cross play off 👎🏼

Unfortunately it is not possible to cross-play an Xbox Series S|X with the Xbox One.
