Let people play with bots in Conquest mode without internet connection.

@ChrisAWJBethelYou find it in the single player Arcade settings where Instant Action is. That's where you'll find Starfighter Assault offline too.

The screen shots you attached are from the main multiplayer menus.

@ArchAngeL-PCXThat's Starfighter Arcade, not Assault. They're two different game modes.
