I remember those days from BF4 too where you had a way faster turn if you hit the sweet spot of the jets speed.
And as you said, it actually shows the skill and experience of the player if he is used to this sweet spot and gets behind your jet really quickly.
In BF1 and BFV probably the more old styled setting might didn't really offer that much freedom for the team to fit it into the Plane handling. As we also didn't had such a modern digital display in the cockpit were it could have been shown at.
And as we will be able to also fly Jets in 2042 again, they might have a sweet spot again too.
But as this speed sweet spot wasn't really mentioned to be a thing back then in BF4 too, i don't think anyone will or can confirm it by now.
It was more like figured out by the players themselves as they were continue flying Jets and getting better, more experienced and started testing new tactics in dogfights.
But as soon as we get hands on the Beta, you most likely will be able to test out some jets too.
