I just tried to replicate your report, but playing as Sundance and damaging enemies with the incendiary grenade counted for me for the Weekly Challenge.
Please make sure that you're playing in an official public server, or a Portal Server with AI-enabled that allows Weekly Challenges in order to track the challenge.
It's also likely that if you try to continue the weekly challenge by damaging enemies with Sundance's Smart Grenades Gadget, it probably won't work as it's a gadget rather than a standalone grenade.
