While I see your point, you need to factor in that the existing skins are attempting to show standard issue kit and gear.
There are normally no women specific sizes or fitting most of the time so it's all pretty homogeneous, and the moment any person (man, woman, or whatever) kit up in RL, they will look pretty much the same, the only visible thing really is either height or build of that person.
I would encourage you to search some RL images of deployed female soldiers and operators, so you can hopefully understand where I am coming from.

That said, the game is barely a month alive, give it time to add content and appearances, surely there's more coming that will be to your liking! :D
I am talking out of my a** here, but I guess the ethnic styling is to try and add some diversity as best they could to the characters while wearing all the gear.
Also, bear in mind that one faction in particular (Desert Locusts) are based on Egyptian Armed Forces, so their looks are in accordance to that.
In regards to customization, I don't recall any of that present in any BF series. It would be a cool thing to add, but to be honest with all the chaos and equipment and being in first person, I don't really see the point to it (but that's me), especially given how no player is involved in any type of storytelling or cinematic other than the short deployment animation at the start of the match.
