I live in Azerbaijan. If I'll buy Battlefield 1 what will be the audio and text language? I have a hunch that it will be Polish/Russian. I want English. The prices on the store shows up in russian rubble (wth?) which makes me hesitant to buy it.
Hey @FrozenLeafling ! In my experience I was able to change whatever the language I wanted in the past when I've bought the game out of my continent. So it shouldn't be a problem.

It really depends on the platform. If you will play on PC, you can change the language to any language of your choice. On consoles it's different, like PS4 there are regional versions of games that don't have some languages. Keep in mind that most games have English as a main language.
You can change your PS4 language to English and BF1 will be in English. As for the audio, the language is very limited and you won't see many languages, but you can change it in the audio settings. I'm not sure about PS5 and/or Xbox.
