If you don't have access to the email address registered to an EA account linked with your PSN, you'll want to reach out to our support team directly so they can help update those account details.
You'll be unable to update your account with these steps if you don't have access to that email, but you can contact support via the link at the bottom of that page. They'll need to verify some other information about the account before any changes can be made, so that will be the best way to get this looked into further.
