I have no explanation why you cant change resolutions  bf1942 does not store profiles into registry but into

C:\Program Files (x86)\EA GAMES\Battlefield 1942\Mods\bf1942\Settings\Profiles\

make sure the game is running  with  win xp sp3 mode and administrator rights

also do you have multiplayer ?  this way i know you install the gamespy patch fix alot of problems with the game
